We Grow Our Wines

Hand-harvested, estate-grown fruit from our sustainably farmed 60 acres of vineyard. We grow 26 varietals, researching and developing the land and vines to produce one-of-a-kind nuanced wines for your enjoyment.

Our team not only farms the land and grows the grapes, but also vinifies the wine with nominal interference in the cellar to truly express the unique high desert terroir.

Our range of clean, ethically produced wines have little to no sulfite additions and are always gluten-free, 100% vegan, and non-GMO.

If you have enjoyed Colorado wine before, you have most likely tasted our grapes. Now we present them to you as the Grapegrower intended.

The Story: Collaboration

After working together on numerous wine projects, Winemaker Patric Matysiewski and Grapegrower Kaibab Sauvage formed a partnership in 2019 with the goal to create a new breed of estate winery, Sauvage Spectrum. Their first release, Sparklet is a lifestyle brand focused on fun, fruit-forward, & affordable sparkling wines. Handcrafted, artisanal blends are grown with the intention to produce a modern sparkling wine. Nominal interference in the cellar highlights our premium high desert fruit. Unusual and rare blends allow us to exercise creativity showcasing the versatility of Colorado wines without being tied to tradition. Sauvage Spectrum is 100% Colorado estate grown and bottled. Our Owners are hands-on and visible in the production of our grapes and wine every day, in the vineyard and winery.

Grapes: The Taste of Palisade

Our vineyards are situated in the Grand Valley AVA, and the magical town of Palisade sitting at 4,728'. Grown with melted snow from the steep slopes of the Rocky Mountains, via irrigation from the Colorado River. The "million-dollar breeze" blows through the high desert valley, developing thick skins on our grapes. The sunshine beats down on the valley floor, an ancient riverbed, radiating off the Bookcliffs and surrounding mesas. Warm days and cool nights allow our fruit to ripen but retain acidity for balance. Alluvium silt, sand, and clay loam soils with the addition of volcanic rock lend a unique minerality to our wines. Every year new grape varietals are planted for research and development, to further define the future of Colorado wine. We are not interested in mimicking wines from other regions. We are developing grapes with the intention to produce the true taste of Colorado wines.

We invite you to join our exclusive and finite members only club aimed to provide its constituents with firsthand access to limited small batch production wines, library wines, and single varietal bottlings unavailable to the general public. Observe and partake in backstage access in the growth of the Sauvage Spectrum Estate, as well learn about the winegrowing and winemaking facets of the business.
